Summary:
Objective To establish an analytical method for the determination of trans fatty acids in hydrogenated oil processed foods by gas chromatography. Methods HP-88 capillary Shi Ying column (30 m × 0.25mm × 0.20 μm) was used to separate and quantify 43 saturated fatty acids and unsaturated fatty acids, and applied to the determination of trans fatty acids in commercial biscuits, cakes, ice cream, milk tea, chocolate, coffee and other processed foods. Results The separation of cis and trans fatty acids in a 30 m long capillary quartz column was good, the TFA linearity of each trans fatty acid was good (R≥ 0.9990) in the concentration range of 3~100 μg/m L, the reproducibility was good (RSD<6%), the recovery rate was 85.3% ~ 91.8%, and the detection limit was 0.01g/100g; the separation speed is twice as fast as that of 100 m long capillary Shi Ying column. Cream cake, condensed milk cheese and biscuit contain higher content of trans fatty acid, and trans palmitoleic acid (t-C16:1) and trans oleic acid (t-C18:1) are the main components. Conclusion The method is rapid, accurate and well separated, and can be used as a popularization method for detecting the content of trans fatty acids in hydrogenated oil processed foods.
